The Ultimate Birthday Cake

Since we are trying hard to put ourselves on a strict spend less money policy we agreed that for our birthdays we would not get each other gifts as that money can be better spent on our trip. We don’t need anything right now except travel gear and that sort of shopping we want to do together. 

So to make Scott’s birthday yesterday still special I decided to make him a specially chosen just for him birthday “cake”.

Chocolate Brownie Cheesecake served warmed out of the oven with Vanilla Ice Cream and topped with Caramel Sauce and Walnuts.

He loved it and claimed it as “The Ultimate Dessert”

However, all these treats I’ve been baking really means we gotta get our ass in gear on that whole getting into shape plan!!!



For those of you that are interested in the recipe:


900-g package brownie mix (usually 2 boxes) and the ingredients it calls for (usually 2 eggs)
1 250-g package cream cheese at room temperature
1 teaspoon vanilla extract
1 egg yolk

1. Prepare brownie batter as directed on the package.
2. With an electric mixer, beat cream cheese, vanilla, and egg yolk in a small bowl until smooth and spreadable.
3. In a greased 9″ x 12″ ovenproof dish, pour in half the brownie batter.
4. Drop half the cream-cheese mixture by spoonfulls over the brownie batter and spread.
5. Pour in remaining batter and dot top with remaining cream-cheese mixture.
6. With a knife, gently stir batter and cream-cheese mixture together to create a marbled effect.
7. Bake as directed on the brownie package.

Of course I’m sure this would be even better if you made the brownie from scratch.
